The Brussel Sprouts are cooked and ready to go under a grill just 20 minutes before serving:

Brussel Sprouts cut in halves, smoked bacon chopped, leeks sliced, pre-cooked vacuum packed chestnuts

In a deep frying pan with a splash of oil cook together bacon and leeks for about 20 minutes.

Push them on the side of the pan and lay brussel spouts halves cut side down, pushing leeks and bacon on the top of the sprouts as you fill the bottom of the pan.

Turn the heat up until the sprouts start really sizzling, then add a half of a glass of Marsala wine , cover the pan with a lid and cook on a medium heat for further 15  minutes. The wine should cook out totally.

Add crumbled chestnuts.

It’s ready to go under the high grill for 15 -20 minutes before serving
