This little fellow has just appeared after two days of heavy rain and it’s going to the first Cep ( porcini) omelette of this year. The autumn is coming.
Sunshine salad: watermelon and Feta! Bon appetit!
Summer fair on the plate!
On the hot summer day there is nothing as good and refreshing as OKROSHKA – type of Russian cold soup: mixture of chopped fresh veggies, eggs and new potatoes, lots of fresh herbs and of course KVAS traditional russian drink. All served with crème fraîche or greek yoghurt . Yummy!
Look what has already dotted our garden all over the place with a cheerful red dots and very yummy ones! Wild strawberries! Horray! The summer is coming!
On a cold rainy day like today my ultimate comfort food will always be Russian Borsch. Full of vitamins from every winter vegetable available, of a great colour and , I cannot describe, of a wonderful flavour, it is absolutely one of Must try!
The greatest thing about Borsch is that it gets better on the next and following day. Served with or without dollop of creme fraiche and good chunk of proper bread, it can be a starter or a light meal on it’s own.
Of course, there are many recipes depending on the region and country ( there is a Ukranian, Polish etc…) , everyone has their own secret. I don’t believe that there is such a thing as a Classic Borscht, it varies so much. But what I do know , that the one we serve here has never fail to surprise and impress our guests.
