This is one of the favorites winter time warming hearty dishes, that you prepare in the morning put in the oven and forget about it for the rest of the day. About an hour before the dinner : “Oh! Look! It’s a magic!”

Serves 8 people

You need:

for 1kg of beef ( the cheapest cut, that you would buy for long long cooking)

1 kg of onion sliced,

dark soy sauce,

fish sauce,

1 – 2 large cans of Guinness,

black pepper,

bay leaf,

3 tbs of tomato puree,

2 tbs of ketchup,


1 tbsp dried basil

1 tbs dried coriander seed powder

knob of butter

Preheat oven 150°C.

Cut the meat into cubes approximately 4×4 cm (* they must not be small!)
Brown each piece on a dry frying pan or with a little butter, put aside.

Deglaze the pan with some Guinness.

In a large deep casserole melt some butter and cook sliced onions until just started browning.

Add meat, splash of soy sauce, generous splash of fish sauce, basil and coriander, pepper, tomato puree and ketchup, then Guinness. The Guiness must just cover the meat.

Be careful with salt, as soy sauce and fish sauce are salty
Bring all to the boil cover  with a sheet of foil and then with a lid . Put in the oven 150°C for 4 to 5 hrs.

About 1 hour before dinner, turn the oven off and open the door slightly, so the oven does not cool down too quickly. The cooked meat will rest and relax now.

Serve with roast vegetables and green beans.
