To all our guests who requested the recipe of the dressing that I use in several starters, here it is:

2 parts of White wine vinegar ( essential! it has to be White wine vinegar)

5 parts of olive oil

3 table spoons of liquid honey

3 teaspoons of Dijon mustard

freshly ground black pepper to taste

3 – 4  handfuls ( the more the better)  of fresh mint leaves finely chopped

Mix all ingredients well and store in the closed jar in a fridge.

The dressing has to be rather sweet than sour.

The sweetness level can be adjusted by adding more honey or vinegar.

The fresh mint CANNOT be substituted .
