Serves 4 to 8
8 Large White or Chestnut Mushrooms, cleaned, stalks removed and kept aside
100g of Homemade Fresh Breadcrumbs
50 g soft butter
2-3 Cloves of Garlic, minced
4-5 Tbsp of Fresh Parsley finely chopped
Olive Oil to drizzle
Salt and Pepper to taste
1) Preheat the oven to 200 C°
2) Chop the mushroom stalks finely and in a large bowl combine them together with the breadcrumbs, parsley, garlic, butter, salt and pepper. I use a food proccessor to chop and mix everything at the same time.
3) Spoon prepared stuffing mixture into the mushrooms and place them in a slightly oiled baking dish.
4) Drizzle a little olive oil on top and bake them for about 30 minutes or until the tops are golden brown.
Serve hot as a Starter on the bed of salad with some fresh tomatoes and nice dressing or as a part of a Main course.
